Sobremar means under the sea, which represents the soil that this wine is made on. Ages old seashells have make the soil a very special form of chalk, completely white of color and giving the wines its freshness and minerality without increasing the acidity level. Hand-harvested at night. Vertical press. Fermented and stored in inert tanks until bottling to preserve the varietal profile and the saline contribution of the albariza soils without oxidative interference. On the nose, it's fresh with notes of citrus, green apple, and a touch of reduction. On the palate, it's saline with a medium body. An elegant, fresh, and appealing white wine, with saline and savory notes characteristic of the terroir and Atlantic coast. It's ready to drink now, but with enough structure and complexity to age for the next two years.
